Salted Coconut Caramel Chocolat Pots De Creme ~ Gluten Free, Dairy Free, Egg Free,

To celebrate I made this recipe for a Chocolate version of the french dish Pot de Creme, A loose custard dessert made with milk or cream and normally thickened with eggs, the dish dates back to the 17th century.

I have updated it to be healthier and paleo friendly.

Instead of eggs I used gelatin to thicken this dessert, using gelatin instead of eggs adds extra health benefits to this delicious dessert and along with the amazing health benefits you get from the cacao powder, which I list in my recipe for Chocolate Madeleine Cakes this recipe is much healthier than a regular dessert would be Yay!


Here are some Health Benefits of a good quality gelatin such as the great lakes brand.

1) Gut Health: Gelatin helps fill holes and damaged stomach lining as well as reducing gut inflammation.

2) Bone Health: We need calcium and collagen to keep our bones healthy and two great ways to get collagen is from the gelatin if bone broth or grass fed powdered gelatin.

3) Joint Health: For Healthy joints and the connective tissues in your joints, which are made of collagen, adding gelatin to your diet can help strengthen your joints and help joint pain.

4) Skin and Hair Health:  Since there is collagen in gelatin it means that it’s also great for your skin and hair, collagen helps keep your skin young and wrinkle free and improves the strength and shine of your hair.

So now you don’t need to feel as guilty making this dessert for your valentine! Because along with being amazingly decadent with chocolate and salted caramel it also has some wonderful health benefits too!

Salted Coconut Caramel Chocolat Pots De Creme ~ Gluten Free, Dairy Free, Egg Free,


  • Chocolat Pots De Creme
  • 1 1/2 cups almond milk
  • 2 1/4 tsp high-quality beef gelatin
  • 2 tbsp maple syrup
  • 1/4 cup Raw Cacao Powder
  • pinch sea salt
  • Paleo Salted Coconut Caramel
  • 1 (14 oz) can full-fat, (not light) coconut milk (I like the native forest brand)
  • 1/2 cup coconut palm sugar
  • 2 Tbsp maple syrup
  • 1-2 vanilla beans scraped of their delicious caviar! or 1 tbsp vanilla extract/flavoring
  • 1/2 teaspoon fleur de sel salt (A French salt perfect for caramel!)


  • Chocolat Pots De Creme
  • Instruction:
  • Combine the cold almond milk, maple syrup and gelatin into a sauce pan and let the gelatin bloom in the cold milk for 1~2 mins.
  • Heat the almond milk on medium-low, You want to warm it enough to dissolve the gelatin but not boil it. Add the Raw Cacao powder and stir/whisk until it combined.
  • Once the cacao powder is thoroughly combined, Turn off the heat and whisk in the sea salt.
  • Pour into your desired glasses or cups and chill for 1~2 hours or until set.
  • Paleo Salted Coconut Caramel
  • Instruction:
  • Cut the vanilla beans top to bottom and with a knife scrape the caviar from the beans. (Dont! throw out the beans you can put them in organic sugar to make vanilla sugar or gather them until you have a bunch and add them to gluten free vodka to make vanilla extract!)
  • Combine the coconut milk, maple syrup, Vanilla bean caviar or vanilla flavoring, and coconut palm sugar in a medium saucepan on the stove top over medium-high heat. Whisk until coconut sugar starts dissolving.
  • Bring just to a boil, than so it doesn’t boil over turn the heat down to medium and simmer until thickened about 15~20 minutes, whisking frequently so it doesn’t burn.
  • When done it should be medium to dark amber in color, and reduced to about 1 Cup.
  • Cool completely, use immediately on your Chocolat Pots De Creme and Store the rest in a glass jar with a lid in the fridge for up to 3 weeks. Like it will even last that long HAHAHA!
  • Top your Pots De Creme with Fleur De Sel and joy!!
