As you know I like tea and i’m very excited because I’m going to be selling some of my tea’s at the local farmer market.

I’ve been busy having fun picking out display designs for my table and booth!

I was inspired to make these when I was drinking one of my favorite chocolate tea’s. I wanted something with some spice that would pair well with my tea, but was only a couple of bites so it was like a snack perfect for tea.

These little guys are soft and taste like spices, if you take a bite and close your eyes, the taste will make you think your walking down a Moroccan spice market.

Drizzled with honey and topped with sweet red plums makes these little bites a delight for a snack or accompaniment for your afternoon tea.

Paleo Spiced Red Plum Tea Cakes ~ gluten free, grain free,

Ingredients

  • 1/4 cup almond butter
  • 1 tbsp butter or ghee
  • 8 tbsp honey
  • 2 eggs
  • 2 tbsp cassava flour
  • 1/2 tsp baking soda
  • 1/2 tsp cardamom
  • 1/4 tsp chinese five spice powder
  • 1/2 tsp salt
  • 2 red plums
  • 1 tbsp maple sugar

Instructions

  • 1) Preheat oven to 325F and grease a muffin pan with cooking spray, coconut oil or butter.
  • 2) Place a sauce pan on medium heat, Quarter the plums lengthwise and discard the pits. Cut the wedges in half and place in the sauce pan with 5 tbsp of the honey.
  • 3) Cook the plums until there soft, than place them off to the side.
  • 4) Put the almond butter and butter in a stand mixer with the paddle attachment, mix on low speed until the butter is incorporated.
  • 5) Add the eggs and 3 tbsp of honey mix well, scrape the sides of the bowl with a large silicone spatula.
  • 6) In a serpate bowl mix together the cassava flour, baking soda, cardamom, chinese five spice, and salt.
  • 7) With the mixer on low speed, add the flour mixture and mix until the batter is smooth.
  • 8) Transfer the batter to a pipping bag and pipe the batter into the muffin pan, filling each one half full.
  • 9) Sprinkle the top of the batter in each muffin cup with maple sugar and then press 1~2 plum wedges into the batter of each muffin cup and bake until set and light golden brown, about 10~12 mins.
  • 10) To garnish: Drizzle with honey and/or sprinkle with organic powdered sugar. Serve with Tea! and Enjoy!
