Who need’s store bought waffles that make you feel sick and heavy after eating them.

These Paleo Waffles are gluten & grain-free, Dairy free, light, and crispy.

Plus you can top them with fresh fruit and whipped coconut cream, or take two of them and make them into an egg breakfast sandwich. Which this girl likes to do on an everyday basis.

Ingredients

  • 1-1/2 Cup Almond Flour
  • ¼ Cup Arrowroot powder
  • 1/4 Tsp Salt
  • 1/4 Tsp Baking Soda
  • 2 Tbsp Maple Syrup
  • 4 Eggs
  • 1 tbsp Vanilla
  • 1/2 cup Unsweetened Almond Milk

Instructions

  • 1) Combine all dry ingredients in a large glass bowl, the bowl of a food processor or a blender and mix/pulse to combine.
  • 2) Add the wet ingredients (maple syrup, eggs, almond milk, and vanilla) to the dry ingredients and pulse/mix until thoroughly combined. You should have a slightly thick but smooth batter.
  • 3) Heat your waffle iron according to it's instructions (set at about a medium heat). Lightly brush or spray a light olive oil or melted coconut oil on your waffle iron.
  • 4) Fill the waffle iron with the batter according to the irons instructions. Don't overfill it though, I use a 1/4 measuring cup to pour the batter for each waffle into the pan.
  • 5) Cook until your waffle iron alerts you that it's done cooking or when steam stops rising and you can easily open the waffle iron. The time may vary depending on what type of waffle iron you're using.
  • 6) Repeat until all the batter is gone. I can make about 9-10 waffles with my waffle iron.
  • 7) Gently remove the waffles with a fork and serve hot with your favorite toppings, or as an egg bacon sandwich with some nice crunchy peppery watercress and paleo mayo. Yum! (Pictured above ⇑)
  • Topping Ideas
  • ~Sliced Fruit such as: Bananas, Apples, Strawberries, Raspberries, Blueberries, or Blackberries.
  • ~Honey-Sweetened Jam
  • ~Pure Maple Syrup
  • ~Raw Honey
  • ~Coconut Milk Whipped Cream
  • ~Enjoy Life Chocolate Chips
  • ~Or pan fry an egg and cook some bacon, spread some paleo mayo on your waffle and make a yummy egg sandwich!

  • Do you intend the eggs whites to be beat to soft peaks & folded in to lighten the batter or do you only use the yolks & save the whites for another recipe?
    Looks tasty.

    • Sorry J Cookson That was actually a typo that I just fixed thank you for letting me know, please use all of the eggs not just the yolks. 🙂
Separating the eggs and folding in the fluffed egg whites is another option that can be done for this recipe, but it is easier to just use the whole egg and the waffles still come out plenty fluffy! 🙂

  • Finally got time to try these this AM. Wonderful!
Earned a “Wow! You could serve these to real people” from my wife & I (you folks on limiting diets know what I mean).
Nice & fluffy, cooked evenly & released from the iron nicely.
    Excellent recipe. Well done.
