These lovely little bites of creamy key lime heaven are super easy to make and can be made in bulk, so you can hoard them like a fluffy tailed squirrel and never share them with anyone!…

Plus these delicious heavenly bites are packed with awesome energy power!

Almonds have good fats and fiber to help keep you going through out your day and they help keep your heart healthy. Dates put a little sticky sweetness in this recipe and also add fiber and potassium to your diet.

Coconut oil is great for energy and helps us feel full for longer and also helps keep our energy levels in a stable range. coconut oil also helps us absorb those important fat-soluble vitamins A, D, E and K.

My Husband always likes to have a wifey approved paleo snack on hand and my mother likes to think i’m her personal paleo chef lol… which of course I am. so I like to make extra for her too which she loves!

Key Lime Pie Paleo Bites ~ Paleo, Gluten Free, Grain Free, Dairy Free

Makes about 12-15

Key Lime Pie Paleo Bites ~ Paleo, Gluten Free, Grain Free, Dairy Free

Ingredients

  • Key Lime Pie Paleo Bites
  • Almond & Pecan Crumble for Rolling
  • 5 pitted dates
  • 1/4 cup pecans
  • 1/4 cup almonds
  • 1 teaspoon vanilla extract
  • Key lime Cream
  • 1 cup Almond butter
  • 1 cup coconut oil
  • 1/4 cup lime juice + zest from 1 lime (add more depending on desired lime flavor)
  • 1/4 cup honey
  • 1 teaspoons vanilla
  • pinch of pink Himalayan salt or sea salt

Instructions

  • Almond & Pecan Crumble for Rolling
  • 1) Blend crust ingredients well in a food processor until mixture is crumbly and starts sticking together. Place into a bowl and set aside while preparing filling.
  • Key lime Cream
  • 1) Blend ingredients in a food processor until smooth and creamy, about 5 mins. refrigerate for at least 30 mins or until solid enough to scoop and roll into balls.
  • 2) I like to use a tiny ice cream scoop or you could just use a regular spoon or your hands to scoop out and form small round balls, roll them in your palms to smooth them out and make them a bit more uniform and then roll each ball in the almond pecan crumble to coat.
  • 3) Store in an airtight container in the refrigerator for up to a week.
